French croissants

We finished the week cooking some rich pastries for this sunny afternoon

Ingredients 🥣

  • 700 g wheat flour 0000 #Morixe
  • 1/2 liter of milk
  • 70 g of butter
  • 1 1/2 tsp salt
  • 70 g of sugar
  • 16 g of baking powder
  • 1 egg

Preparation 🥄
  1. Place the butter with milk in a bowl and heat for a few seconds in the microwave or on the stove, until the milk is warm and the butter is soft
  2. Pour into a larger bowl and add the yeast and sugar. Mix until it is all together.
  3. Add the salt and half of the flour until it binds, then we gradually incorporate the rest of the flour and form a homogeneous dough.
  4. We form a bun and knead for 15 mins, we have to achieve an elastic and moist dough
  5. Let rise until it doubles in size, placing plastic wrap over the bowl
  6. Place the dough on the counter, divide it in two, and stretch one of the parts, until we are approximately 1mm high. It should not be too thin
  7. Cut the dough into 10x15cm rectangles, which we will then cut into 2 triangles
  8. We roll the triangles from one side, towards the vertex, and place them in an oven-safe dish
  9. Let it rise again for about 30 minutes, meanwhile we are preheating the oven to 180 °
  10. Once they have grown, paint them with egg yolk, and bake until golden brown. eye! They are done quickly, calculate 5/7 mins depending on the oven
  11. You can paint them with syrup, and add quince or pastry cream 🙌🏽
